A lighter version of this yummy southern favorite that tastes amazingly good even if is healthy. Just ”batter” your zucchini with seasoned breadcrumbs and parmesan cheese – then bake it in the oven – delicious – you’ll never miss the deep fat frying part! Serve it up as an appetizer or side dish.

2 small zucchini cut in 1/4 ” slices
1 cup seasoned breadcrumbs
1/2 cup Parmesan cheese, fresh grated
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
fresh ground black pepper to taste
2 egg whites
1/2 cup milk
cooking spray

Preheat oven to 425 degrees. Grease a large oven-proof wire rack and set on a baking sheet.
Whisk together egg whites and milk in a shallow bowl. Mix breadcrumbs, cheese, and seasonings in another shallow bowl.
Dip zucchini slices in egg mix and then in breadcrumb mixture patting the crumbs on.
Place slices on wire rack. Repeat until all are coated.
Bake for 30 minutes or until golden brown. Serve hot.
