There is one thing in the South that I cannot get use to – Southern Food – chicken fried Steak, fried okra, fried this, fried that… (Sorry Paula). There are some Southern foods that I do love, Tex Mex- taco’s, chips and salsa, burritos, margarita’s (I LOVE those). But a friend introduced me to Baked Cornbread Casserole. Cornbread is definitely a southern food, BUT I don’t know if I would consider this recipe southern??? I mean, you use Jiffy Mix and hello that is a Michigan company!!! This recip

1 box of Jiffy cornbread mix
1 cup of sour cream
1 stick of butter (melted)
1 can of cream style corn
1 can of whole corn (drained)
2 eggs
1 cup of sour cream
1 stick of butter (melted)
1 can of cream style corn
1 can of whole corn (drained)
2 eggs
I use a 9×13 baking dish. Spray baking dish with non stick cooking spray.
Mix Jiffy mix, butter, corn and eggs in baking dish.
Add sour cream. Mix it all up.
Bake 350 for 40-45 mins.
