Baked Mashed Potatoes with Parmesan Cheese

Creamy, cheesy and delicious mashed potatoes with a crunchy bread crumb topping.

4 pounds russet potatoes peeled and cut into small pieces
1 small head of garlic, about 6 cloves, peeled and left whole
1 cup milk or half and half
1/2 cup melted butter
1 1/2 cups grated mozzarella
1 cup grated parmesan
salt and pepper to taste
2 -3 tablespoons panko bread crumbs
1. Preheat oven to 400 degrees. Grease a 13 x 9 x 2 inch baking dish with butter. 2. Cook the potatoes and garlic cloves in salted water til very tender. Usually about 15 to 20 mins. ( I have also made without garlic and it is equally delicious) 3. Drain and mash the potatoes. Mix in the milk and melted butter. 4. Add the mozzarella and 3/4 cup of parmesan. 5. Season with salt and pepper and transfer the potatoes to the greased baking dish. 6. Combine the bread crumbs and 1/4 cup parmesan cheese and sprinkle over the mashed potatoes. 7. Bake uncovered until golden brown, about 15 - 20 minutes.
