Baked Peach and Almond French Toast Casserole

This Healthy French Toast Bake is loaded with fresh peaches and a crunchy, almond streusel. Quick, easy and can be made ahead!

5 Slices whole wheat bread
2 Eggs
½ Cup liquid egg whites (about 4 large whites)
¼ Cup Unsweetened vanilla almond milk
1 tsp Vanilla extract
2 Tbsp Granulated sugar
½ tsp Cinnamon
¼ tsp Ginger powder
1 small peach, diced (about 1 cup)
1 Tbsp Honey
For the topping:
2 Tbsp Oat flour (just put 2 Tbsp oatmeal into a food processor)
2 Tbsp Rolled oats
2 Tbsp Brown sugar
6 Tbsp Almonds, sliced
? tsp Cinnamon
2 Tbsp Coconut oil, melted
Additional honey, for drizzling.

In a large bowl, beat together the eggs, egg whites, almond milk, vanilla extract, sugar, cinnamon and ginger.
