Balsamic Beets

I'm always looking for a new way to cook beets. The fact that this one is cooked in the crockpot, made me love it even more.

4 medium beets
3 cups water (or enough to cover the beets)
2 tbsp balsamic vinegar
1 bay leaf
Peel beets and place in crockpot. Add water, vinegar, and bay leaf. Cover and cook on low until the beets are tender. 6 to 8 hours. Discard the bay leaf. Drain and slice beets
