Moist muffins with a great banana flavor

MUFFIN MIX
3 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
6 ripe bananas; smashed
2 eggs lightly beaten
1 cup melted butter
1 TBL vanilla
TOPPING
1/2 stick VERY COLD STICK BUTTER
1/2 cup flour
1/8 cup sugar
1 tsp cinnamon
PREHEAT OVEN TO 375 MUFFIN MIX: 1. In a large bowl, combine the dry ingredients for the MUFFIN MIX. 2. In another bowl, combine the bananas, sugar, egg, vanilla and butter and mix well. 3. Stir the wet ingredients into the dry until combined. 4. Fill (either greased muffin cups or paper lined muffin cups) 3/4 full with mixture.
