Banana Muffins with Fluffy Caramel-Vanilla Frosting

These muffins are a perfect after-school snack! They are light, but filling enough to tide the kids over until dinner. The frosting is much less sweet than a typical frosting...it's actually made with flour! Don't let that fool you, it's the best (non-chocolate) frosting you'll ever taste. This recipe is for anyone seeking Mom of the Year status at home.

1 cup sugar
1/4 cup canola oil
1/4 c applesauce
2 eggs
3 ripe bananas
2 cups flour
1 tsp baking soda
1/2 tsp salt

6 tbsp flour
1 cup milk (I always have whole milk in my fridge, but any is fine)
1 cup salted butter
1/2 cup white sugar
1/2 cup brown sugar
2 tsp vanilla
Mix sugar and oil well. Add eggs and bananas and beat. Add flour, soda and salt. Pour into lined muffin tins. Bake at 350 for 18-20 minutes. Makes 18-24 muffins. Whisk together the flour and milk. ...
