Banana-Walnut Muffins
Super moist, fluffy, and almost even bouncyish banana muffin that is easily enjoyed with a cup of milk, hot chocolate or even coffee!!

1 1/2 cups unbleached all purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 1/2 teaspoons Vanilla Extract
1 1/4 cups mashed ripe bananas, about 3 large
1/2 cup granulated sugar
1/4 cup dark brown sugar
1/2 cup corn oil (or any oil of preference)
1/4 cup milk, room temp.
1 large egg
1 cup walnutnuts, toasted and finely chopped
1 1/2 teaspoons baking soda
1/4 teaspoon salt
