Barbeque Sauce

124

I wanted a BBQ sauce that didn’t contain all the chemicals, etc. that seem to be in the prepared stuff. I found one like I wanted and tweaked it to this result. If your family is in the “no-see-um” mode about onions I would just put this thru a blender before storing it. It makes about 2 ½ cups of sauce. I plan to increase the recipe to the amount needed to can it in pint jars. If you want those quantities, contact me for the info. Substitutions I made: 1/3 c. dehydrated onions = 1 c. af

2
1 TBS coconut oil (or cooking oil of your choice)
1 cup onion, diced small (abt 1 large)
1 ½ cups chicken stock/broth/boullion (1 - 14.5 oz. can works)
1 6 oz. can tomato paste
1 TBS Soy Sauce
2 TBS Apple Cider Vinegar
½ tsp. cumin or curry powder
½ tsp. ground oregano
½ tsp. dry mustard powder
½ tsp. basil
1 TBS Chili Powder
3 cloves garlic, minced or 1 tsp. minced garlic from jar (produce section)
¼ c. Honey
Heat Oil in sauce pan and sauté onion 3-4 min. until translucent. Add all remaining ingredients and bring to a boil, then simmer, covered, about 20 min. If you want the onions “no-see-um”, then put thru a blender when it has cooled off a bit.
