Healthy Orange-BBQ Pulled Pork Mexican Tostadas (with a flourless tostada base!) & a Grilled Pineapple Salsa

For the Tostadas:
1 Green Plantain, diced into chunks
2 Eggs
1 tbsp coconut oil, melted
Pinch of Salt (I used Pink Himalayan)
Juice of half a lime (about 1 tbsp)
Coconut Oil (or any oil) for greasing
