Beet and Carrot Salad

Grated beet and carrot salad: the healthiest meal you’ll have all week.

1 beet (large)
5 carrots (large)
½ tablespoon salt
2 tablespoons oil
½ tablespoon vinegar
½ lemon (juice only)
Peel and wash beet and carrots. Grate them. Mix salt, oil, vinegar, and lemon juice separately. Add to the salad. Mix really well. (Optional) Leave in the fridge for a couple of hours.
