Beetroot Cup Cakes With Oreo Frosting

Easy and hastle free cupcakes without the use of artificial food color. Just used beetroot puree with cake ingredients and oreo cookies powdered and mixed into buttercream frosting. Turned out to be super moist and delicious.

Ingredients for Beet Root Cup Cakes:
1 1/2 Cups( 210 Grams) All Purpose Flour
2 Tablespoons Cocoa Powder
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Cup White Granulated Sugar
3 Eggs
3/4 Cup Grated or chopped Beet Root
5 Tablespoons(3/4 Cup) or 170 grams Salted Butter Kept at room temperature
3/4 Cup (180 Ml) Buttermilk
Juice of 1 Large lime
1 1/2 Teaspoon Vanilla essence



Ingredients for Oreo Frosting:
8 tablespoons(1/2 Cup) Salted Butter kept at room temperature
3/4 Cup( 120 Grams ) Powder Sugar
1 Teaspoon Vanilla essence
1-2 Teaspoon Heavy whipping cream or milk
5-6 Tablespoons Oreo cookies powder( Crush the cookies in food processor or blender to fine powder)
