Berry Banana Muffins

These yummy banana muffins are a family favorite. A raspberry on top makes them an extra special treat.

1/3 cup low-fat milk
1/4 cup vegetable oil
1 large egg
2 cups all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup mashed banana
12 fresh raspberries

Preheat oven to 375 degrees F. Prepare a 12-cup muffin pan by spraying with cooking spray or using paper liners.
Combine milk, oil, egg, and bananas in a medium bowl. Mix well with a fork and set aside. In a large bowl, combine flour, sugar, baking powder, and salt. Mix well and make a well in the center. Pour the banana mixture into the well and lightly stir it all together - do not overmix! Spoon the batter into the prepared pan and top each muffin with one fresh raspberry.
Bake for 20 minutes. (For even cooking, turn the pan around 180 degrees halfway through baking). Remove from pan and let cool slightly on a wire rack. Serve warm.
