Best Allergy Free Chocolate Chip Cookies

The best allergy free chocolate chip cookies I have ate! Makes 2 dozen so my husband will make me a batch of these twice a year and I keep them in the freezer to get out 1 or 2 when I want a treat. If I didn't freeze them, I would probably eat a whole dozen in one sitting, they are that good!!

3/4 cup sugar
3/4 cup brown sugar
1 cup earth balance spread
1 teaspoon vanilla
1 large egg or 1 tablespoon flax seed meal and 3 tablespoons water
2 3/4 cup Bob's Red Mill gluten free flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup Enjoy Life chocolate chips
Heat oven to 375 degrees. Beat sugars, vanilla, earth balance spread, and egg with electric mixer on medium speed. Mix in rest of ingredients. Drop by rounded tablespoons about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes.
