Best Ever Toffee Chocolate Chunk Cookies

I make these cookies and a quiet reverie falls over our house. The boys – even my Husband – start talking in hushed tones. ”She’s making THE cookies”, they whisper. You need to make these cookies as soon as you possibly can.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 sticks, unsalted butter, room temperature
3/4 cup packed light-brown sugar
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups oats
6 ounces chocolate chunks {cut up bars or use store bought}
1 cup toffee pieces {ie: Heath bar bits}

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
