Best Every Slow Cooker Turkey Bolognese

Bolognese has to be my favorite pasta sauce. I have a traditional(cook all day) recipe that I have posted previously but I wanted to come up with a recipe for the slow cooker that would replicate the taste and texture of the traditional method. My last slow cooker recipe(which I posted) was good but a bit runny. I hadn't taken the condensation that the slow cooker produces into consideration. 2 pounds lean ground turkey
4 large carrots, peeled
2 large onions, peeled and quartered
2 large cloves garlic
4 stalks of celery, cut into fourths
2 28 oz cans of San Marzano Tomatoes
2 6 oz cans of tomato paste
1 bottle of good red wine
2 tsp dried thyme
2 bay leaves
salt and pepper
2 tbsp olive oil
