Big Daddy's Jammin' Salmon Burgers

Make sure to use the skinless boneless salmon in the 6 oz cans.

BURGERS:
1/2 Valida Onion Chopped (a small white onion will work)
3 Eggs
2/3 Cup Panko Bread Crumbs
1/2 tsp Black Pepper
1 tsp Kosher Salt
1 Lemon, Zested
4 T Dill Mayonnaise (Recipe Below)
3 (6 oz. Cans Alaska Skinless, Boneless Pink Salmon, Drained Well)
1/4-1/2 Cup Vegetable Oil (For Frying)

DILL MAYONNAISE:
1/2 cup Mayonnaise
1/2 Lemon, Juiced
2 Tbls Chopped Dill
Pinch Cayenne
1/2 tsp Salt
1/2 tsp Cracked Pepper
BURGERS: Preheat oven to 400 degrees. In a large bowl combine onion, eggs, panko, black pepper, salt, lemon zest and Dill Mayo together. Add drained salmon and mix well. Make 6 patties and set aside. Heat vegetable oil and cook burgers till brown on both sides. Place burgers on a cookie sheet and place in oven for 3-4 minutes,
