Bit O' Honey Bars

120

This chewy bar is adapted from a basic brown sugar bar recipe. I wanted the flavor to mimic that of the nostalgic candy Bit-O-Honey. Delish!

¼ cup butter or margarine
1 cup packed light brown sugar
1 egg well beaten
3 Tbsp. honey
¾ cup all purpose flour
1 tsp. baking powder
½ tsp. vanilla extract
? cup blanched almonds, chopped
Preheat your oven to 350 degrees. Grease an 8×8 pan with shortening or spray with cooking oil. Melt margarine in a small sauce pan and remove from heat. Add the brown sugar and honey to the saucepan and stir until combined. Stir in egg and mix well. Combine flour and baking powder, then stir into the brown sugar mixture. Add vanilla and fold in almonds. Pour batter into the prepared pan and bake for 30 minutes. Let cool completely before cutting.
