Black Bean Chicken Chili

This recipe is fast to put together and oh soooo delicious. This is the perfect meal for these cold winter nights!

4 cups Chicken Breast, cut into 1/2" pieces
3 cups Chicken Broth
1 large Onion chopped (about 1 cup)
1 can Black Beans (15 oz)
1 can whole kernel corn (15 oz), drained
1/4 cup Olive Oil
1 clove of Garlic finely chopped
1 Tbsp. dried basil leaves
Salt and Pepper to taste
2 tsp. cayenne pepper (adjust as needed to your taste)
Cook chicken in olive oil until done. Saute onion and garlic in olive oil over low heat, stirring until lightly browned. Mix all ingredients together in a pot and heat to a boil. Reduce heat and simmer for 1 hour. Stirring occasionally. ENJOY!

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
