Moist, decadent chocolate cake filled with layers of poached cherries and whipped cream frosting.

For the filling:
2 cups water
1/2 cup granulated sugar
2 cups dark sweet cherries, such as Bing, pitted and cut in half
For the cake:
1/2 cup cake flour
1/2 cup Dutch-process cocoa powder
6 eggs, at room temperature
1 teaspoon vanilla extract
3/4 cup granulated sugar
1 stick unsalted butter, melted and cooled to room temperature
For the sugar syrup:
1/4 cup granulated sugar
1/4 cup reserved poaching liquid
1 teaspoon kirsch
For the frosting:
2 1/2 cups heavy cream
1/4 cup confectioners' sugar
Garnish (optional):
