Blackberry Lemon Cake with Blackberry Buttercream Frosting

This lemon cake is moist and delicious and there is homemade blackberry curd and blackberry buttercream between each layer. I love lemon desserts and the combination of the ripe, juicy blackberries and the tartness of the lemon – so delicious.

For The Lemon Cake:

3 cups all-purpose flour
1 Tbsp. baking powder
1 box instant lemon pudding mix
1/2 tsp. salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups sugar
4 large eggs
Greated zest of 2 lemons, finely chopped
2 Tbsp. lemon juice
8 oz sour cream

For The Blackberry Buttercream:

2 cups blackberries
2 sticks unsalted butter, room temperature
3-4 cups confectioner’s sugar, sifted
2 tsp lemon juice

For The Filling:

¾ cup Blackberry Curd {alternately, you could use seedless blackberry jam}
