Blueberry Coffeecake with Brown Sugar Sour Cream Sauce

This is an easy cake, especially for a crowd. You can substitute the blueberries for cranberries too if you like. Frozen or fresh berries work equally as well, Be sure you grease the pan well.

2 cups flour
1/2 cup sugar
1 Tbsp baking powder
1/2 tsp salt

2 eggs
1/4 cup oil
3/4 cup milk

1 cup blueberries or cranberries or raspberries

Topping
1/3 cup flour
1/2 cup brown sugar
1/4 cup butter

Brown Sugar Sour Cream Sauce
1 cup sour cream
3 Tbsp brown sugar
Preheat Oven to 350 degrees. Grease a tube pan really well. Mix together the first 4 ingredients. In a separate bowl. whisk together the eggs, oil and milk. Pour wet into dry, mixing well. Add berries and stir lightly. Pour into well-greased tube pan. Mix topping ingredients together (flour, brown sugar and butter) together until crumbly and sprinkle on top of the batter. Bake for 50 mins or until toothpick comes out clean. Sauce Mix together the sour cream and brown sugar until sugar dissolves and sauce is smooth. Spoon onto slices of cake to serve.
