Boozy Caramel Apple Bread Pudding

3 eggs, beaten
1 teaspoon sea salt
1 1/2 teaspoons nutmeg
1 teaspoon vanilla
1/3 cup sugar
4 cups whole milk
1 green apple apple, peeled and sliced into 1/2? slices
1 cup golden raisins
1/2 loaf sourdough, cut in 1/2? – 1? pieces (about 5 cups)
Rum-Caramel sauce:
1/2 cup sugar
1/4 cup brown sugar
1/4 cup hot water
1 cup heavy cream
2 tablespoons rum
1 teaspoon vanilla extract
2 teaspoons cold unsalted butter
