Try these individual sized Frittata Muffins filled with sweet potatoes, spinach and prosciutto. They are perfect for breakfast!

6 large eggs
½ teaspoon salt
¼ teaspoon fresh ground black pepper
2 tablespoons freshly grated Parmesan cheese
1-2 tablespoons olive oil
1 small onion, chopped
1 small (12-14oz) sweet potato, cut into small cubes
½ teaspoon dried thyme
¼ cup red bell pepper, diced
4 oz prosciutto, chopped
1 loose cup baby spinach, roughly chopped
2 cloves garlic, minced
