Maple Béchamel:

2 tablespoons all-purpose flour
2 cups milk
1/2 cup maple syrup
1/4 teaspoons salt
1/4 teaspoon freshly grated nutmeg
Pancakes:
3 cups all-purpose flour
2 tablespoons + 1 teaspoon baking powder
2 teaspoons salt
2 tablespoons white sugar
2 1/2 cups milk
2 eggs
6 tablespoons butter, melted
12 eggs, scrambled
¾ lb. breakfast sausage, cooked & drained
1 cup cheddar cheese, finely shredded
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1/2 cup maple syrup
1/4 teaspoons salt
1/4 teaspoon freshly grated nutmeg
Pancakes:
3 cups all-purpose flour
2 tablespoons + 1 teaspoon baking powder

2 1/2 cups milk
2 eggs
6 tablespoons butter, melted
12 eggs, scrambled
¾ lb. breakfast sausage, cooked & drained
1 cup cheddar cheese, finely shredded
Cook sausage and set aside.
Prepare the béchamel sauce by melting the butter over medium heat in small sauce pan. Once melted add in flour and cook until it is a light gold color, about 5 minutes.
