Maple Béchamel:
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1/2 cup maple syrup
1/4 teaspoons salt
1/4 teaspoon freshly grated nutmeg

Pancakes:
3 cups all-purpose flour
2 tablespoons + 1 teaspoon baking powder
2 teaspoons salt
2 tablespoons white sugar
2 1/2 cups milk
2 eggs
6 tablespoons butter, melted

12 eggs, scrambled
¾ lb. breakfast sausage, cooked & drained
1 cup cheddar cheese, finely shredded
