Breakfast Quiche

I have made this breakfast recipe as a great protein packed dinner as well, and it's nice to have leftovers for those lazy mornings. This quiche is awesome at any temperature, and at any time of day.

1 pound thick cut bacon, diced
1 large bunch baby spinach
12 eggs
1 cup mushrooms, diced
3 green onions, chopped
3 tblsp full-fat canned coconut milk
2 garlic cloves, minced
1 tsp onion powder
1 tblsp Italian seasoning
