Potatoes, eggs, sausage, cheese and a yummy sauce make these a yummy dish for breakfast or dinner.

2 medium potatoes diced in small bite size pieces
8 eggs
1 Tbsp butter
8-10 tortillas (I used fajita size)
1 pound sausage
1/2 shredded cheddar cheese (or mexican blend)
avocados, salsa, sour cream, onions, bell peppers to top (optional)
Sauce:
2 Tbsp Chili Powder
1/2 tsp onion powder
1/2 tsp garlic powder
1 Tbsp flour
1 8 oz can Tomato Sauce
1/2 cup water
Dash Tabasco (or other Pepper sauce)
