Bright, Light Buttermilk Syrup

This is a slightly lightened version of our favorite buttermilk syrup. It is both wonderfully sweet and tangy. The sugar and butter are a little less than the original recipe, but it tastes as delicious as before! We like it on pancakes, french toast and waffles.

3/4 cup granulated sugar
1 c. buttermilk
2 T. butter
2 T. corn syrup
1 tsp. baking soda
2 tsp. vanilla

2 tsp. vanilla
1. Place first five ingredients in a large saucepan (through honey).
2. Bring to a boil and cook for 7 minutes (mixture will foam and rise a lot), stirring occasionally to prevent scorching.
3. Remove from heat and stir in vanilla extract.
4. Serve warm on pancakes, waffles or french toast.
