Delicious cakes packed with butter and sugar giving that unmistakable Victoria Sponge texture and flavour. These are finished off with a cream cheese frosting topped with jam.

200g sugar
1 tsp vanilla extract
4 medium eggs
200g plain flour
2 1/4 teaspoons baking powder

Filling:
50g butter
50g cream cheese
180g icing (confectioners’) sugar
1/4 teaspoon vanilla sugar
