Broccoli and feta fritters

These broccoli and feta fritters are the perfect quick vegetarian lunch option - crispy and chewy on the outside, soft and creamy inside, the flavours of the broccoli and feta both shine through!

110g broccoli
2 medium eggs
70g plain flour
70g feta, crumbled
2 cloves garlic, minced
2tbsp fresh parsley, chopped
Salt
Black pepper
4tbsp oil for frying
Fresh lemon, to serve
Cut the broccoli up a little, and steam for 5-10 minutes until fairly tender. Meanwhile, beat the eggs in a large bowl and mix in the flour, crumbled feta, minced garlic and chopped parsley, and season well.
