1 teaspoon olive oil
1 pound chicken cut into bite sized chunks
3 tablespoons butter
½ cup diced onions
½ cup diced carrots
1 large head of broccoli (2-3 cups)
4 cups chicken stock
2 cups water
1 teaspoon salt
3 tablespoons flour
2 cups half and half
2 cups shredded cheddar (I used smoked)
