Brunch Rice Cakes with Hollandaise are a great use for leftovers and taste great for breakfast or brunch!

2 tsp. vegetable oil + 2 Tbs. vegetable oil
1 leek, cleaned and finely chopped
1 Tbs. butter
1 c. cooked rice
2 egg whites
¼ c. panko
4 oz. cooked salmon
¼ tsp. salt

FOR THE HOLLANDAISE
1 stick of butter
2 egg yolks
1½ Tbs. fresh lemon juice
2-3 dashes Sriracha sauce
¼ tsp. salt
? tsp. pepper
2 tsp. chopped fresh parsley
2 tsp. vegetable oil + 2 Tbs. vegetable oil
