Buffalo Quinoa & Eggplant Balls

These baked quinoa & eggplant balls covered in buffalo sauce are a much healthier and vegetarian option to fried chicken wings. And they are super easy to make!

For the vegetarian balls:

3 aubergines

1 cup of quinoa

4 shallots, chopped

2 cloves of garlic, minced

1 tablespoon of olive oil

1 teaspoon of paprika powder

¾ teaspoon of salt

½ teaspoon of onion powder

3 eggs

1 cup of panko

6 tablespoons of flour

For the sauce:

2 bottles of Frank’s Red Hot Buffalo Wings Sauce

4 tablespoons of agave syrup or honey

2 tablespoons of coconut oil

For the topping:

150gr gorgonzola or any other kind of blue cheese that you may like
First slice the aubergines in half and roast them in the oven at 180C/350F for 30 minutes. While the aubergines are in the oven, cook the quinoa. Rinse it under cold water and then boil it for 12 minutes....
