Buffalo Shrimp Sandwich

The creamy avocado ranch dressing cools down the spicy buffalo shrimp in this sandwich.

1 pound raw shrimp, peeled and deveined
1 teaspoon olive oil
1 tsp. cumin
2 tablespoons butter
1/2 cup + 2 Tbl. hot sauce, divided (Frank’s Buffalo Sauce)
1 large avocado, peeled and pitted
2 Tbl. light Ranch dressing
1/4 tsp. each salt and pepper
Mixed greens
4 French rolls
1 teaspoon olive oil
1 tsp. cumin
2 tablespoons butter
1/2 cup + 2 Tbl. hot sauce, divided (Frank’s Buffalo Sauce)
1 large avocado, peeled and pitted
2 Tbl. light Ranch dressing
1/4 tsp. each salt and pepper

4 French rolls
1. In zip top plastic bag, combine olive oil, cumin and 2 Tbl. hot sauce. Add shrimp and mix to combine. Let marinade for 30 minutes.
2. Preheat oven to 400 degrees. Place shrimp on a baking sheet and cook for 8-10 minutes just until shrimp are pink and firm and cooked through.
3. Meanwhile, combine butter and ½ cup hot sauce in a small skillet. Add cooked shrimp.
4. Preheat the broiler with the rack in the upper third position. Halve the French rolls, place on oven rack and broil until toasted and brown around the edges, 2 minutes.
5. Combine avocado, salt, pepper, and ranch dressing in a small bowl.
6. To make sandwich, layer mixed greens and ¼ of shrimp onto the bottom half of each French roll. Drizzle with any hot sauce left in skillet. Spread ¼ of avocado ranch onto top of French roll. Cut each sandwich in half and serve.
