Butter Mint Chocolate Push Pops

Push pops are so fun and kids just LOVE them! I used my favorite brownie recipe and made a wonderful butter mint cream filling…the flavor is spot-on with the yummy butter mints you snake a big handful of when leaving a restaurant.

For the brownies:
3 squares of unsweetened chocolate
1 1/2 sticks unsalted butter
1 1/2 cup of sugar
3 eggs
1 1/2 tsp. vanilla
¼ cup flour plus 2 tablespoons
1/2 teaspoon salt

For the Butter Mint Filling:
1 stick unsalted butter
2 1/2 cups powdered sugar
2 tablespoons milk
1/4 teaspoon peppermint extract (or if using oil or flavor, use half)
1-2 drops green food coloring (optional)
