Buttermilk Blueberry Explosion Cake!

Juicy, sweet & tangy blueberries exploding with tons of flavor in a light, fluffy, buttermilk cake. Perfect for snacking or breakfast!

½ cup unsalted butter, softened
2 teaspoons lemon zest from 1 large lemon
1 cup (+ 1 tablespoon sugar for top of cake)
2 large eggs, room temp
1 teaspoon vanilla extract
1 cup all purpose flour (reserve 1/4 cup of the flour to toss with the blueberries)
1 1/4 cups cake flour
2 teaspoons baking powder
1 teaspoon salt
2 cups blueberries, fresh
3/4 cup buttermilk
Optional: Cinnamon sugar for topping (1 tablespoon sugar mixed with 1/4 teaspoon cinnamon)

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons.
