Buttermilk Pancake Squares

My family loves the Baked Pancake Squares from Big Red Kitchen. I am always looking for new ways to do breakfast and this recipe is one of them! We have adapted it to make it our own a bit, but both versions are a hit in our house!

1 1/2 cup buttermilk (or you can use just under a cup and a half of regular milk and add 1 1/2 T. vinegar-- wait 5 minutes and you have a buttermilk substitute!)
4 T. melted butter or margarine
2 large egg
2 T. sugar
2 cup flour
4 t. baking powder
1/2 t. salt

Preheat oven to 350°. Grease an 9x13 baking dish. In a large mixing bowl, beat together milk, butter and egg. Add sugar, then gradually beat the flour in. Carefully stir in the baking powder and salt. Pour batter into prepared pan. Bake for 20-25 minutes. Serve topped with syrup and powdered sugar or strawberries and whip cream.
