Healthy twist on the traditional zucchini bread.

3 eggs
1 cup canola oil
2 cups granulated sugar
2 cups grated butternut squash
1 tsp vanilla extract
1 tsp salt
3-1/2 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
3 tsp cinnamon

1 stalk celery
2 green onions

1 t lemon juice
1 t white vinegar
