Butternut Squash Potato Soup

Today, I realized that a lot of my readers are already experiencing cold weather. I bet they are ready for some nice fall soups to help them warm up. It’s hard to think about hot soups here is FL, the weather is still in the 80s here. I have been staring at the squash and wondering what will it become, for a few days. I now know, this soup was always it’s purpose in life. The soup turned out really good, it’s almost gone!

1 medium butternut squash
2 medium gold potatoes
1/2 medium yellow onion
2 tbs butter
2 garlic cloves
About 2-3 cups of vegetable stock (just enough to cover the veggies)
Salt, fresh cracked pepper
1/4 tsp of paprika
1 small bay leaf
2 tbs heavy cream
1/2 cup mild cheddar cheese

Sour cream, chives and croutons for garnish
