Cajun Spiced Chicken with Sauteed Mustard Greens

Add a little Cajun spice to your life with this mouth watering chicken paired with healthy mustard greens.

3 tablespoons olive oil, divided
4 (4-ounce) chicken breasts, skinless and boneless, all fat removed
2 teaspoons Cajun seasoning
2 garlic cloves, minced (1 teaspoon minced garlic or ¼ teaspoon garlic powder)
1 shallot, chopped
1 medium red bell pepper, seeds and membranes removed, chopped
1 bunch mustard greens (about 10 cups chopped), stems discarded and leaves chopped
1 (15-ounce) can navy or cannellini beans, rinsed and drained
Sea salt or kosher salt, to taste
Fresh ground black pepper, to taste
