1 tsp. (6) dried oregano or 1 tablespoon fresh chopped oregano (if using fresh, add at the end of the cooking time)
2 cans (14.5 oz. ea.) diced tomatoes (undrained) or 2 (12) pounds diced fresh tomatoes
1 tsp. (6) sugar
½ tsp. (3) red pepper flakes
½ tsp. (3) kosher salt
Black pepper to taste
