1 large onion, chopped
1 med bell pepper, chopped
4 cloves garlic, peeled and minced
5 lbs fresh ripe tomatoes, peeled, quartered, and hard core removed
2 (6 oz.) cans tomato paste
1/4 c. red wine
2 tbsp. chopped fresh oregano
2 tbsp. chopped fresh basil
2 tbsp. chopped fresh rosemary
3 tbsp. chopped fresh thyme
1 large pinch salt
Pepper, to taste
