Fresh tomatoes, mozzarella cheese and arugula tossed with balsamic vinegar stuffed into a tomato

12 Small tomatoes
¼ cup chopped roasted red peppers
2 ounces chopped fresh mozzarella
½ cup arugula or frisee
2 tbsp. chopped basil
1 tsp. olive oil
2 tsp. balsamic vinegar
¼ tsp. salt

Cut top off of tomatoes. Do not throw away tomato caps.
