This is a fun pie to make and put together. It involves a bit of bashing, a bit of mixing and a bit of chilling..and you're all done! No baking, no cooking, just bash and mix.I love caramel! I also love marshmallows and chocolate! So I decided to combine them all and make a dessert that would be easy, yet eye catching and look a million dollars...so let me introduce to you my Caramel Mountain Top Cheesecake. The Base:
75 g / 2 1/2 oz butter
220 g / 8oz Digestive Biscuits (cookies) or Honey Graham Crackers

The Filling:
200 ml / 7 fl oz fresh whipping cream
200 g / 7 oz cream cheese (room temperature)
5-6 Tablespoons of Dulce De Leche (soft)
2 Tablespoons Icing sugar / powdered sugar (only add this if you have a VERY VERY sweet tooth!)
A handful of mini marshmallows or large marshmallows chopped into mini ones.
A few tablespoons of mini malteser / whopper - like chocolate bits. You can usually find these in the cake decorating section. Or little fudge bits. I like malteser bits for the crunch.
