Caramel Pumpkin Cookies

These gooey caramel filled pumpkin cookies are a true fall time wonder. With a nice kick of fall time spices and caramel oozing out the edges, this cookies will bring a little kid smile to your face! I mean, who doesn't love surprises in the middle!

1/2 cup unsalted butter, room temperature
1 1/2 cups granulated sugar, divided
1/3 cup pumpkin puree
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
