Caramelized Onion Chicken with a Blueberry Tofu Topping

Delicious blend of flavors in the chicken and topping make this meal wonderful

2 tablespoons olive oil
1 tablespoon butter
1 clove garlic (chopped)
1/2 medium red onion (cut into chunks)
2 tablespoons brown sugar (light or dark)
1 teaspoon fresh parsley (chopped)
2 large boneless skinless chicken breasts (cut in half)
salt and pepper to taste
1 1/2 cup frozen blueberries (thawed)
3 tablespoons balsamic vinegar
1/4 cup light white wine
2 tablespoons Cedar Lane Blackberry Buzz ((can substitute any blackberry preserves))
2 cloves roasted garlic
1/3 cup soft silken tofu
