The best, simple, fast, yummy sauce ever!

1 cup guanciale (pork cheeks)

1 cup chopped bacon

1 tbsp EVO oil

4 egg yolks

1 egg

1 cup Pecorino cheese

a pinch of salt and pepper
Start cooking pasta (see “How to cook perfect Pasta al dente”). Meanwhile put guanciale and bacon in a non stick pan with a tbsp oil and fry till it’s crispy.
