Caribbean Avocado Shrimp Roll-Ups

Tortillas loaded with shrimp, avocado, peppers and pineapple.

6 slices bacon
1 pound shrimp, cooked, peeled and deveined, tails removed
1 teaspoon jerk seasoning
2 ripe avocados, pitted and diced
1 red pepper, diced
1 yellow pepper, diced
1 can pineapple tidbits, drained
3 green onions, chopped
1/4 cup chopped fresh cilantro
1 teaspoon hot sauce
3 tablespoons lime juice
1 cup tortilla strips (optional)
Salt and pepper, to taste
8 large wraps or tortillas

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
