Carnitas is one of my favorite dishes to splurge on if we go out for truly authentic Mexican food. I love the tender spiced pork and the different sauces that can be served with it. When I make it at home I love having diced avocado on it with roasted corn salsa and cilantro lime crema served on a tortilla. Don’t forget the pico, fresh cilantro and a squeeze of lime!

4 lb pork shoulder cut into large pieces
1/4 c seasoned salt
5 cloves of garlic
1 onion, quartered
1 t liquid smoke
1 t ground coriander
1 4 oz can of hot hatch green chiles*
