Carrie's Cheesy Vegetable Chowder

This easy, cheese and vegetable packed soup is warm, filling, and ready in under a half an hour! The perfect soup recipe for chilly evenings.

5 ½ Tbsp butter, divided
3 chopped carrots
2 stalks celery chopped
1 cup chopped yellow onion
2 cloves garlic, minced
3 cups chicken broth
3 ½ cups peeled and cubed russet potatoes
3 cups chopped broccoli florets
1 8oz container of fresh bella mushrooms
¼ tsp dried thyme
¼ tsp salt
¼ tsp ground black pepper
6 Tbsp all-purpose flour
3 cups milk
½ cup heavy cream
2 cups shredded sharp cheddar cheese
½ cup finely shredded parmesan cheese
